1 cup chedder cheese crackers - crushed
1/4 cup parmesan cheese
2 eggs beaten
1 cup oil
Salt and pepper
Your favorite chicken parts (I like the legs and use 6 for this recipe)
Instructions:
Wash and pat dry chicken. Mix crushed crackers and parm cheese.
Beat eggs with salt and pepper.
Dip chicken in egg and then roll in cracker mixture.
Pour oil in pan and heat till very hot.
When oil is ready put in each chicken piece, one at a time.
Cook turning and browning all sides. Fry about 12 minutes till cooked through.
Serve with potato salad or whatever you like!!!
